Ingredients
  

  • 1 box lemon cake mix
  • 1 21-ounce can lemon pie filling
  • 1/2 cup vodka lemon vodka if you’re feelin’ fancy
  • 1/4 cup fresh lemon juice
  • 1 Tablespoon lemon zest
  • 1/2 cup unsalted butter melted
  • Optional: powdered sugar whipped cream, lemon slices for garnish

Instructions
 

  • Preheat oven to 350°F (175°C) and lightly grease a 9x13-inch baking dish.
  • In a mixing bowl, stir together lemon pie filling, vodka, lemon juice, and lemon zest.
  • Pour the mixture into the baking dish and spread evenly.
  • Sprinkle the dry lemon cake mix evenly over the top—no mixing!
  • Drizzle the melted butter over the cake mix, making sure it’s as evenly distributed as possible.
  • Bake for 40–45 minutes, or until the top is golden and bubbly.
  • Cool slightly before serving. Garnish with powdered sugar, whipped cream, or lemon slices if desired.

Notes

Alcohol content will reduce during baking, but at 10-15% remains.
