1 box lemon cake mix 1 21-ounce can lemon pie filling 1/2 cup vodka lemon vodka if you’re feelin’ fancy 1/4 cup fresh lemon juice 1 Tablespoon lemon zest 1/2 cup unsalted butter melted Optional: powdered sugar whipped cream, lemon slices for garnish
Preheat oven to 350°F (175°C) and lightly grease a 9x13-inch baking dish.
In a mixing bowl, stir together lemon pie filling, vodka, lemon juice, and lemon zest.
Pour the mixture into the baking dish and spread evenly.
Sprinkle the dry lemon cake mix evenly over the top—no mixing!
Drizzle the melted butter over the cake mix, making sure it’s as evenly distributed as possible.
Bake for 40–45 minutes, or until the top is golden and bubbly.
Cool slightly before serving. Garnish with powdered sugar, whipped cream, or lemon slices if desired.
Alcohol content will reduce during baking, but at 10-15% remains.
