Equipment

  • 1 9" x 13" baking dish or pan

Ingredients

  • 1 21-ounce can fig preserves
  • 1 8-ounce package mascarpone cheese softened
  • 1 box vanilla cake mix
  • 1/2 cup unsalted butter melted
  • 1/2 cup chopped walnuts optional, for crunch
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon cinnamon
  • Zest of 1 lemon

Instructions

  • Preheat your oven to 350°F (175°C) and grease a 9x13-inch baking dish.
  • Spread the fig preserves evenly across the bottom of the dish.
  • Drop spoonfuls of mascarpone cheese over the fig preserves and gently spread it to create a somewhat even layer.
  • Sprinkle the vanilla cake mix evenly over the mascarpone and figs.
  • Drizzle the melted butter over the cake mix, covering as much as possible. Don’t worry if some dry spots remain.
  • Sprinkle the chopped walnuts on top (optional).
  • Add the vanilla extract, cinnamon, and lemon zest over the mixture.
  • Bake for 35-40 minutes, or until the top is golden brown and bubbly.
  • Let cool for 10 minutes before serving. This pairs beautifully with whipped cream or a scoop of vanilla ice cream!
