Ingredients
  

  • 1 box spice cake mix
  • 2 scooops vanilla or pumpkin spice-flavored protein powder
  • 1 cup canned pumpkin purée
  • 1 cup Greek yogurt vanilla or plain
  • 1/2 cup unsweetened almond milk
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1 teaspoon baking powder
  • 1 teaspoon vanilla extract
  • 1/4 cup water
  • Whipped cream or Greek yogurt for topping optional

Instructions
 

  • Preheat your oven to 350°F (175°C) and grease a 9x13 baking dish.
  • Dump the cake mix, protein powder, cinnamon, nutmeg, and baking powder into the dish. Stir lightly.
  • Add pumpkin purée, Greek yogurt, almond milk, vanilla extract, and water. Stir until just combined.
  • Spread the batter evenly in the dish and bake for 25-30 minutes, or until the kitchen smells like a pumpkin spice wonderland and a toothpick comes out clean.
  • Let the cake cool for 10 minutes before topping with whipped cream or Greek yogurt, if you’re feeling extra cozy.
