Ingredients
  

  • 1 box carrot cake mix
  • 2 scoops vanilla protein powder
  • 1 cup Greek yogurt plain or vanilla
  • 1/2 cup unsweetened almond milk
  • 1/2 cup shredded carrots
  • 1/4 cup crushed pineapple optional
  • 1 teaspoon cinnamon
  • 1 teaspoon baking powder
  • 1/4 cup water
  • 1/4 cup chopped walnuts or pecans optional

Instructions
 

  • Preheat your oven to 350°F (175°C) and grease a 9x13 baking dish.
  • Dump the cake mix, protein powder, cinnamon, and baking powder into the dish. Stir gently to combine.
  • Add Greek yogurt, almond milk, water, shredded carrots, and crushed pineapple. Stir until just mixed.
  • Sprinkle chopped walnuts or pecans on top if you’re feeling fancy.
  • Bake for 25-30 minutes or until your kitchen smells like a dreamy carrot cake and a toothpick comes out clean.
  • Let the cake cool for 10 minutes—if you can resist the temptation that long!
